Description: Cassia is made from the bark of trees in eastern Asia, related to the cinnamon tree.

History: As early as 2,000 BC, cinnamon (cassia) has been used for many different things. Egyptians used it as a perfuming agent during the embalming process, and was even cited in the Old Testament as an ingredient in anointing oil. It is thought to have been introduced to Europe by Arab traders, where it proved to be equally popular.
